Micro-Zyme P 500 Enzyme-Activated Powdered Detergent

by Tim Vandergift

Micro-Zyme is a powerful, non-chlorinated detergent, designed to clean the toughest stains and grime from any wine (or beer) equipment or surface. A specially formulated detergent, made without fragrances, colours or harsh chemicals, it harnesses the power of enzymes to destroy red wine stains and beer scum—it will even take ‘permanent’ red wine stains out of white cotton that’s already been washed and dried!

The secret is protease enzyme. This enzyme has the power to break up and destroy the kinds of protein compounds that make up the tough soils found in the consumer-produced beverage industry. Activated by warm water, this detergent will remove films from carboys and glassware, plastic, stainless steel, porcelain, rubber, fabric and many others. Because it contains no chlorine or corrosive detergents, it won’t harm surfaces or fade fabric.

Micro-Zyme is used like ordinary detergents: mix 10 grams per litre (2-½ Tbsp/Gallon) of warm water (40°-55°C, 100°-130°F) and soak, brush or sponge the surface. Stubborn stains can be soaked overnight. After the item is clean, rinse thoroughly with warm water. As Micro-Zyme contains no harsh chemical sterilants, you should use it in conjunction with a regimen of contact sanitisers for your application—metabisulphite fines for wine, or Iodophor for beer.

Because the formulation is low-foaming, it can even be used in dishwashers and home washing machines!
